Ingredients:
500 grams (1.1 lbs) Tomatoes (ripe red tomatoes) cubed
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil or butter
1 small bay leaf
1/3 teaspoon Salt
1 1/2 cup water
1 tablespoon sugar
3/4 tablespoon cornstarch
1/2 teaspoon pepper
3/4 to 1teaspoon dried herbs
2 stalks Basil (optional)
Instructions:
Step 1. Heat olive oil (or) butter in a large pan over medium heat.
Step 2. Add bay leaf, chopped onions and minced garlic, sauteing until the onions turn golden brown.
Step 3. Add the chopped tomatoes to the pan, along with sugar, dried basil, dried oregano, salt, and pepper.
Step 4. Stir well for 10-15 minutes in low flame until the tomatoes break down and release their juices.
Step 5. Add the soup to the blender and mix in small batches until smooth. Be careful when mixing hot liquids and allow the soup to reach the desired consistency.
Step 6. Add cornstarch to the tomato mixture and mix well to form a roux. Allow it to boil for a couple of minutes to eliminate the raw flavour.
Step 7. Add optional vegetables (or chicken) and stir to combine. Bring to a boil over medium heat, then reduce heat and simmer for 20 to 25 minutes to combine flavours.
